A delicious vegan vegetable soup with tumeric, garlic, dill and ginger. We used carrots, leeks, potatoes, onions and stock powder. 

Simmered in a pan……………..

until soft…………    THEN BLENDED WITH A 240 V HAND BLENDER………………..

Finished with pumpkin seeds and dill. Yum Yum Yum!

We have a new toy- a blender which means we can make vegan smoothies, vegan sauces, vegan soups and hummus! We have a 600 Watt Power inverter in the van with plug sockets attached.

We can power a 300 watt blender no problem so long as the sun shines to refill the battery with lovely free electricity from the solar panels on the roof. Here is our first attempt at a mixed fruit smoothie with seeds,coconut water and rice milk. Yum Yum!

This is us eating breakfast of garlic mushrooms, cherry tomatoes, shallots, wilted spinach  and vegan sausages in a wrap. with the smootie we made. The view is overlooking Skomer Island to the left and St David’s. to the right. What a lovely sunny morning!

Can you recommend a tasty recipe?

This hot oats breakfast is full of good things and will keep you going on a long  walk. We brought the oat mix with us. It has organic oats, gogi berries, sultanas, chopped dates, chia seeds, flax seeds, sesame seeds, hemp seeds in the mix. You can add any nuts and seeds you like. We add a banana, raspberries, blue berries and strawberries to the pan with a plant based milk of your choice. Heat for about five minutes. Save some fruit for adding at the end when the oats are hot.  We used rice milk. The fruit warms and blends really well with the banana and dates sweetening the oats. . Add a few pieces of dark dairy free chocolate at the end and melt it slightly through the hot oats. sprinkle with cinnamon for a delicious hot and filling breakfast.

The van has a 12v Dometic fridge which is essential for fresh food storage and means we can make this delicious fruit salad.

Cheese and vegetable wholemeal wrap makes a simple lunch. Wraps are a great thing to take on an advanture as they can be filled with anything you have to hand. They can be hot or cold fillings.

Cooking a Linda McCartney vegan  burger in a burger bun takes no time at all and just two saucepans. Red peppers and tomatoes in the burger add taste. We served the burger with salad and butter beans in tomato sauce.

We added a slice of Violite Cheese (made from coconut oil) and a glass of vegan Rioja and a candle!

Burger wrap with beans and salad makes a quick and simple lunch. The beans are a can of organic mixed beans with passata and cajun spices. You could add ant spices such as curry or Thai spices YUM!

Vegan burger on sweet potato mash with vegan pesto. Pan roasted asparagus, onion rings and red pepper strips, Garlic courgettes and pea shoot green salad.

Seeds Of Change Organic Spinach Trotolle Pasta with Zest Vegan Pesto, sun dried tomatoes, and vegetables. I chopped broccoli, mushrooms, red pepper and spinach  I served this with vegan Linda McCartney sausages and \Violite cheese. 

This dish needs just two saucepans – one for the pasta with a lid and one for the vegetables and pesto sauce. Sprinkle with fresh grounds salt and pepper.

Frys Family Falafel Burgers are delicious! Serve then with butter beans in chopped tomatoes with Thai spices and a avocado and mixed baby leaf salad. We like the falafel burger with a spoon of onion chutney on top. Serve with a wholemeal roll if you are hungrier.
